This spring when things started to calm down from the holiday orders, we started taking a little extra time to feed ourselves lunch. It also helps that in April we have new ingredients to play with. The meal is always satisfying and sometimes we even capture a nice photo of it before we devour it. The staple meal is a variation on a salad. Start with kale, cabbage or romaine and add a nut, vegetable and cheese. For a special day we like to put an egg on it.
